Koren Grieveson was born on the 4th of November 1971. Born in Luanda, Angola, Koren moved to different countries throughout her childhood. Her father who used to work in the poultry business often had to travel overseas. Koren traveled to several countries during her childhood including Zimbabwe, Brazil, Iran, and England. When Karen was 10, the family finally found their way to the US and settled in Connecticut. 

A military woman:

A 17-year-old Karen decided to join the Army despite her mother’s regular protests. This turned out to be a turning point in her career and has been vocal about her time in the service and that it taught her to be disciplined.

In an interview with Food & Wine, Karen revealed that she wanted to join the army to drive their jeeps. So, Karen was gutted when they switched from Jeeps to Humvees that same year.  In retrospect, Karen claims that even though she was young while enlisting, she doesn’t regret joining the army. She also added that she was lucky to serve her country at a time when there was no war. 

Taking baby steps:

Karen began her life away from service as a part of a catering outfit. She later quit the job and decided to pursue food from an academic perspective. This brought her to the Culinary Institute of America located in Hyde Park. She obtained her degree in 1997 and set out to make a name for herself.

Koren officially began her career as a chef with “Aqua” restaurant where she worked under the mentorship of Chef Michael Mina. Learning the tricks of the trade, She later migrated to “Spruce” where she worked under Chef Keith Luce, and to Crofton on Wheel under Chef Suzy Crofton. Recognizing her skills, Executive Chef Paul Kahan invited Koren to work as a sous chef of ā€œBlackbirdā€. In 2003, Koren was handed the reins as the Executive Chef de Cuisine at Kahanā€™s wine bar ā€œAvecā€. She held the post until 2012. She also opened a restaurant called Claudette in New York City with chef Cedric Tovar in 2014, but she left the restaurant after a few months.
